Cucumber Sandwich Recipe

A classic recipe for freshly grown cucumbers, the cucumber sandwich is a light snack that is simple to prepare and bold in taste. A favorite a tea time in the United Kingdom, there are many variations of the cucumber sandwich that are distinct to each location. The recipe below is for a traditional English cucumber sandwich.

Cucumber Sandwich

Ingredients

1 large cucumber, peeled and thinly sliced
2 tablespoons of white vinegar
1 cup of softened, unsalted butter
½ teaspoon of salt
Thin slices of whole wheat bread

Preparation

Before preparation cut the cucumber and let it sit in a bowl to drain of water for about an hour. Pat dry. Once drained, toss the cucumbers with salt, sprinkle with vinegar and mix well. Darin and let the cucumbers chill in the refrigerator for 20 minutes. When it is time to make the sandwiches butter one side of the bread, place the cucumbers evenly across, remove the crust, and cut in to four equal triangles. Arrange and serve.
